They aren’t particularly hard to find, but they can be missed if you don’t look out for them (can still get them later via mission replay). A few of the equipment upgrades require you to check out certain armories. Killing all captains & aces and unlocking jackal weapons/upgrades will come naturally by beating all main missions and side missions. There are no “real” collectibles in this Call of Duty, only the weapons and equipment upgrades. Everything you’ve scanned can be used as loadout. A list of scanned weapons can be found on the spaceship where you select your loadout in between missions. They are scanned automatically upon picking them up.
Make sure you scan all Weapons along the way. To minimize the time to platinum you should start on Veteran difficulty.
